We work hard to compost our food waste and return those nutrients to Earth’s soil but an important, often overlooked, step to food waste prevention starts in the kitchen. Recent research from the University of Guelph (Ontario, Canada) shows that “families with growing children waste nearly 3 kg (6.6 pounds) of edible food each week, which can cost them over $1,000 a year.”
To help fix this common issue, the Guelph Food Waste Research Group, The Helderleigh Foundation, and George Brown College’s Food Innovation & Research Studio (FIRSt), joined forces along with Love Food Hate Waste Canada to create a cookbook focused on preventing food waste in our kitchens.
